- 85g Amaretti biscuits
- 200g extra light soft cheese
- 100g 0% fat Greek yoghurt
- 2 tbsp golden caster sugar
- 1/2 tsp vanilla extract
- 100g sliced strawberries
- 1 tbsp strawberry jam
- Place biscuits in a plastic bag and crush with a rolling pin. Divide the crumbs between 4 serving dishes.
- Beat the soft cheese, vanilla, sugar, yoghurt and lemon zest until smooth. Spoon over the crumbs and chill until ready to serve.
- When ready to serve, stir the jam in a bowl until smooth and add strawberries. Divide between the cheesecakes and serve.
